From El Mirador, Palestina, Hulia, grown by Elkin Guzman, this Catiope and Bourbon lot undergoes a 300 hour extended co-fermentation wash. A meticulous process delivering syrupy clarity and mousse-like texture.

TASTE THE JOY - CHEMEX BREW GUIDE

SERVES: 1-2 CUPS
BREW TIME: 4 MINUTES

YOU'LL NEED:
30g coffee (medium-coarse grind)
500g water (just off the boil, 94°C)
Chemex & Chemex filter
Scale & timer

METHOD:
Rinse Filter: Place the filter in the Chemex and rinse with hot water.
Discard the water.
Add Coffee: Pour 30g of ground coffee into the filter. Shake gently to level the bed of coffee.
Bloom: Start your timer. Pour 60g of water over the grounds in a circular motion. Let it bloom for 45 seconds.
Brew: Slowly pour the remaining 440g of water in stages, keeping the water level consistent. Pour in circles, avoiding the edges.
Drawdown: Let the water filter through. Total brew time should be around 4 minutes.
Serve: Remove the filter, swirl the Chemex, and enjoy.
