At Truth Coffee, we celebrate producers who refuse to settle, and Elkin Guzman of El Puente is exactly that kind of force. His work in Huila is precise, progressive, and rooted in a real commitment to the farming community, and this lot proves it. Meticulous cherry selection removes impurities before a controlled, multi-stage fermentation, 24 hours in sacks followed by a further 24–36 hours at the mill, locks in clarity and intent. The coffee is then de-pulped and slow sun-dried for up to 27 days with the mucilage intact, driving sweetness and depth straight into the cup.

The result is unapologetic: bold sweetness, clean structure, and unmistakable character, coffee shaped by purpose, not chance.

BREW GUIDE


SERVES: 1-2 CUPS
BREWTIME: 2 MINUTES


YOU’LL NEED:
• Coffee: 17.5g
• Water: 220g/ml total
• Temperature: 88°C
• Grind: Medium–coarse
• Filter: 2 paper filters, rinsed


METHOD (INVERTED):
1. Add coffee to the inverted Aeropress.
2. Bloom: Pour 50g/ml of water and start
your timer.
3. At the 15-second mark, add another
50g/ml of water (total 100g/ml).
4. Stir anticlockwise with 5 slow,
controlled stirs.
5. At 1:00 minute, add your final pour to
reach 220g/ml total.
6. Screw on the cap with your 2 rinsed
filter papers.
7. Flip & Press: At 1:30, flip onto your
cup and press gently for 30 seconds,
stopping when you hear the hiss.
