Freshly roasted just for you! We will be roasting this special single origin every Tuesday. Packing will take place on a Wednesday, ready for dispatch on a Thursday, for overnight delivery to major centres. Last orders are to be received on the Monday prior to roasting. As an example, if you order on a Friday, your freshly roasted limited edition Peru will be delivered the following Friday.

WHAT IS THIS PROCESS? - CARBONIC MACERATION
This is a technique adapted from wine-making in which whole grapes are fermented instead of being crushed. The same is true for coffee, instead of being de-pulped, the whole cherry is added to the fermentation tank and carbon dioxide is pumped into the tank to begin the fermentation process.
The breakdown of organic substances by various microorganisms begins to take place. They eat away at the sugars and other compounds in the fruit, breaking them down into by-products which are absorbed into the cellular structure of the seed. This leaves us with a coffee seed that is fermented to some degree, which becomes our green coffee beans, ready to roast and brew.
HOW DOES IT MAKE THE COFFEE TASTE?
Carbonic Maceration coffee can be often described as fresh and heavy with a winey syrupy texture and flavours of red fruits like cherry and stonefruit.
ABOUT THE COFFEE FARMER
Sr. Osvaldo Bachião the owner of Fazenda São João is the 3rd generation to farm coffee. His family farm lies high in the hills surrounding Nova Rezende in the famous coffee growing region of Sul de Minas Gerais.
Although the farm lies high in the mountains at 1,120 to 1,230 meters above sea level, the relatively level terrain has enabled the family to mechanise approximately 95% of the harvest. The farm has 9 year-round employees and contract an additional 20 during the harvest season. The family always seeks to marry productivity with high quality, and for their 100% bourbon lots, such as this one, maintaining quality is a particularly high priority. As they say, their Bourbon trees are their ‘babies’. Additionally, they conduct a good deal of microlot separation in order to guarantee the highest possible quality.
